Xylitol

Beverley wrote 'One slight complaint is the obsession with stevia- unless it’s pure there are other better sweeteners on the market- xylitol for example'.
Elevated Blood Sugar
If you have diabetes, exercise caution when consuming products that contain xylitol, because this sweetener can have small effects on your blood sugar and insulin release. Consuming sugar alcohols such as xylitol can slightly elevate your blood sugar levels, especially if you have type 1 diabetes.
Steviol is a natural product and we would use it in preference to xylitol.

A great cookbook to get blood sugars on track

I am really enjoying making recipes from this book. One slight complaint is the obsession with stevia- unless it’s pure there are other better sweetners on the market- xylitol for example. It would be good if there were others mentioned

Very good book for diabetics

Good recipes, clear instructions but needs keeping instructions and makes for smaller loafs ,maybe for one person as bread not eaten every day and there is much wastage. Would recommend though, good flavours so you don’t feel you are missing out.
